Germs have no chance!

At Studer Maschinenbau AG in Switzerland, everything revolves around the struggle between good and evil. Their equipment for cheese dairies not only needs to be functional, it also has to keep ‘evil’ germs like salmonella, listeria and Co. out during the ageing process. At the same time, large quantities of the ‘good’ microorganisms that are essential for making cheese need conditions that allow them to flourish. SOLVARO solved the challenge with – how could they have done otherwise – holes.

They only allow through what should come through.

With a diameter of 854 mm, our ageing racks – which are part of the cheese dairy equipment made by Studer Maschinenbau AG – provide room for a proper wheel. And once the cheese has taken its place on the rack cut from 1.4301 stainless steel with a laser, it will stay there for some time. The Rv-5–8 perforation prevents liquids from accumulating, and also allows enough air to reach the wheel so that the good germs can do their work. And the acids that are created during the various phases of the ageing process cannot damage the material. The ageing rack can be thoroughly cleaned before the next wheel of cheese is placed on it, so germs have no chance of forming. And stainless steel does not rust. The cheese production process makes demands on all of the material’s properties and despite being permanently in use, the ageing racks have an extremely long service life if they are properly cared for.
